Pumpkin mash topped with bangers and caramelized red onions is a vibrant and delicious dish.
Ingredients:
  • 1.2kg butternut pumpkin, peeled, deseeded, coarsely chopped
  • 8 Peppercorn thick pork, ginger & shallot sausages
  • 2 red onions, halved, thinly sliced
  • 40.00 ml balsamic vinegar
Instructions:
  • Steam the pumpkin until soft, then transfer to a bowl and mash until almost smooth using a potato masher or fork. Season with salt and pepper to taste.
  • Heat oil in a large frying pan over medium-high heat. Cook the sausages, turning occasionally, for 8-10 minutes until cooked through. Transfer to a plate, cover with foil to keep warm.
  • Sauté the onion in the pan for 3 minutes until it softens slightly. Pour in the vinegar and cook for 1 minute until heated through. Serve by placing the mash on plates, topping with sausages, spooning over the onion mixture, and seasoning with pepper.
