Pork sausages with mash and caramelised onion

Ingredients:
  • 9.20 gm olive oil
  • 750g pork sausage
  • 40.00g butter
  • 2 medium red onions, halved, thinly sliced
  • 16.00 gm brown sugar
  • 20.00 ml white balsamic vinegar
  • 185.63 gm red wine
  • 900g potato
  • 128.75 gm reduced-fat milk
  • 82.50 ml finely grated parmesan cheese
Instructions:
  • Boil potatoes in a large pot of salted water until tender. Drain and return to the pot. Mash the potatoes with butter and milk until smooth. Stir in parmesan.
  • Heat oil in a frying pan over medium heat. Cook sausages, turning occasionally, for 8 minutes until fully cooked. Transfer to a plate and cover to keep warm.
  • Melt butter in a pan and sauté onions until soft and lightly browned. Stir in sugar and vinegar and cook until lightly caramelized. Transfer to a bowl and cover to keep warm.
  • Pour the wine into the pan and let it come to a boil. Lower the heat and simmer for 3 minutes, or until it's reduced by half. Divide the mashed potatoes between plates, then top with sausages and onions. Drizzle the wine reduction on top and serve.
