Elevate traditional bangers and mash with a modern twist.
Ingredients:
  • 56.88 gm olive oil
  • 3 medium red onions, halved, sliced
  • 30.00 ml balsamic vinegar
  • 500g cherry tomatoes, halved
  • 1kg lady christl potatoes or sebago potatoes, peeled, roughly chopped
  • 2 garlic cloves, crushed
  • Olive oil cooking spray
  • 8 thick pork sausages
Instructions:
  • In a saucepan over medium heat, heat half of the oil. Sauté the onion, stirring occasionally, for 12 to 15 minutes until golden and caramelized. Stir in the vinegar and tomato, then reduce the heat to medium-low. Cook for an additional 5 to 6 minutes until the tomato has softened, stirring occasionally.
  • Boil potatoes in salted water for 10-12 min until tender. Drain and return to pan over low heat. Mash, then add garlic, oil, salt, and pepper. Stir well, then cover to keep warm.
  • Prepare the barbecue plate or chargrill by spraying it with oil and heating it over medium-high heat. Cook the sausages for 12 to 15 minutes, turning occasionally, until they are cooked through. Serve the sausages with onion mixture and mashed potato.
