Sausages with pea mash

Ingredients:
  • 1.25kg sebago (brushed) potatoes, washed, chopped
  • 8 pork or beef sausages
  • 9.20 gm olive oil
  • 500.00 ml frozen peas
  • 40g butter
  • 128.75 gm warm milk
  • Salt and pepper
  • Chutney
  • Steamed carrots or beans
Instructions:
  • In a large saucepan of boiling water, cook 1.25kg of chopped sebago (brushed) potatoes for 30-40 minutes until tender. Drain, cool slightly, and peel.
  • Cook 8 pork or beef sausages in 2 teaspoons of olive oil in a frying pan over medium heat for 18 minutes until fully cooked. Boil 2 cups of frozen peas for 10 minutes until tender, then drain.
  • Blend the peas and potatoes to a creamy consistency with 40g of butter and 1/2 cup of warm milk. Season with salt and pepper. Enjoy with sausages, chutney, and steamed carrots or beans.
