Elevate sausage and mash by skewering with cherry tomatoes and mushrooms for a delicious twist!
Ingredients:
  • 57.20 gm honey
  • 21.00 gm orange juice
  • 16 extra-lean beef chipolata sausages
  • 8 cherry tomatoes
  • 8 small button mushrooms, trimmed
  • 600g desiree potatoes, peeled, chopped
  • 250.00 ml frozen peas
  • 64.38 gm reduced-fat milk
  • 30g butter, chopped
  • 20.00 ml finely chopped fresh chives
Instructions:
  • Preheat your oven to 200C (180C for fan-forced ovens) and prepare a baking tray lined with parchment paper.
  • In a large bowl, combine mustard, honey, and juice. Add sausages and mix well. Skewer 1 end of a sausage, followed by a tomato, and then the other end of the sausage. Repeat with another sausage and a mushroom. Place skewers on a prepared tray and brush with the mustard mixture. Repeat to make a total of 8 skewers. Bake for 20 minutes until golden and cooked through.
  • Boil potato in salted water until tender, about 10-12 minutes. Add peas for final 2 minutes. Drain, then return to pan. Mash until smooth and mix in milk, butter, and chives. Serve with skewers.
