Grilled Italian Sausage Kabobs

Savor juicy grilled sausage skewers with pasta for a quick and satisfying meal.
Ingredients:
  • 1 1/2 pounds Italian sausage links, cut into 1 1/2-inch pieces
  • 2 medium zucchini, cut into 1-inch pieces
  • 1 medium red bell pepper, cut into 1 1/2-inch pieces
  • 1 medium green bell pepper, cut into 1 1/2-inch pieces
  • 6 large pimiento-stuffed olives
  • 1/2 cup pizza sauce
  • 6 cups hot cooked pasta (any variety)
Instructions:
  • In a 10-inch skillet over medium heat, cook the sausage for about 10 minutes until partially cooked, stirring occasionally. Drain the sausage. Thread the sausage, zucchini, and bell peppers alternately onto six 12-inch metal skewers, leaving space between each piece. Finish each skewer by placing an olive on the tip.
  • Grill the kabobs over medium coals, turning and brushing with pizza sauce every few minutes for 20-25 minutes until sausage is cooked through and vegetables are tender-crisp. Serve over pasta with extra pizza sauce on the side, if desired.
