Grill sausages with peppers, onions, and herbs for delicious pocket sandwiches.
Ingredients:
  • 4 links uncooked Italian pork sausage
  • 1 medium green bell pepper, cut into 8 pieces
  • 1 medium red bell pepper, cut into 8 pieces
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon salt
  • 4 soft pita folds (about 6 inches in diameter)
  • 4 (3/4 to 1-oz.) slices mozzarella cheese
Instructions:
  • Preheat your grill on medium heat. Once ready, place the sausage links on the grill and cook for 10 minutes, turning occasionally. Optimal distance over the coals is 4 to 6 inches.
  • In a medium bowl, mix bell peppers, onion, oil, Italian seasoning, and salt together until well combined. Transfer the mixture to a grill basket or grill wok.
  • Once the sausages have cooked for 10 minutes, place the grill basket on the grill. Continue cooking for an additional 10 to 15 minutes or until the sausages are cooked through and the vegetables are tender-crisp, remembering to flip the sausages and mix the vegetables by shaking the basket occasionally.
  • Microwave 2 pita folds on High for about 30 seconds to warm them up, then repeat with remaining pita folds. Top the warm pita folds with sausages and bell pepper mixture, add cheese on top, and fold them over.
