Grilled Italian sausages with peppers and onions in a toasted sandwich roll, reminiscent of Boston's vibrant street festivals.
Ingredients:
  • 4 (4 ounce) links hot Italian sausage
  • 1 red bell pepper, halved and seeded
  • 1 small onion, peeled and cut in half crosswise
  • 2 teaspoons olive oil
  • 1 tablespoon olive oil
  • 4 (6 inch) sandwich rolls, split and toasted
Instructions:
  • Prepare your outdoor grill by preheating it to medium heat. Lightly oil the grate and position it 4 inches away from the heat source.
  • Poke the sausages with a fork and set aside. Trim the onion halves to make them flat on the grill. Brush the bell pepper and onions with 2 teaspoons of olive oil.
  • Grill the sausages, onions, and peppers until sausages are browned and juices run clear, and vegetables are tender with a slight char. Remove from grill.
  • Place the peppers in a paper bag to cool slightly before peeling off and discarding the charred skin. Slice peppers and onions. In a bowl, combine salt, pepper, and 1 tablespoon of olive oil. Add the peppers and onions, toss gently to coat evenly. Serve by filling sandwich rolls with sausages and topping with the pepper and onion mixture.
