Grilled Italian Sausage with Peppers, Onions and Arugula

Succulent Italian sausages, peppers, and onions, drizzled with honey balsamic glaze on a bed of peppery arugula.
Ingredients:
  • 1 large red onion, cut into wedges*
  • 2 large red bell peppers, seeded and cut into thirds
  • 1 pound sweet Italian sausage links
  • Extra virgin olive oil
  • Salt
  • 3 Tbsp honey
  • 3 Tbsp balsamic vinegar
  • 2 to 3 handfuls of baby arugula
  • *Cut the onion wedges so that the root end is still intact on each wedge. It will make the onion wedges easier to grill and help keep them from falling apart on the grill.
Instructions:
  • Fire up the grill.
  • Combine the balsamic vinegar and honey in a small bowl and let sit.
  • Prepare the onions by coating them with olive oil and sprinkling with salt. Grease the grill grates lightly with olive oil. Grill the onions until slightly charred for about 5 minutes. Move the onions to a cooler part of the grill to finish cooking.
  • Prepare the sausages and peppers by coating them with olive oil and sprinkling salt on the peppers. Grill them together, positioning the sausages above the peppers to allow the juices to flavor the peppers. Alternatively, if using a single-level grill, cook the peppers on the hottest part and the sausages on the cooler section. Grill for 15-20 minutes, turning occasionally until done.
  • Drizzle sausages, peppers, and onions with the luscious honey balsamic mixture as they near perfection.
  • After grilling until the sausages are cooked through and the peppers and onions are tender, transfer them to a sheet pan or large bowl. Optionally remove the charred skin from the peppers, then slice them into long strips. Slice the root end off the onions, and cut the sausages into thirds. Combine all ingredients thoroughly in the pan or bowl.
  • To serve, beautifully arrange a bed of baby arugula on plates and layer with the delicious sausage, peppers, and onions.
