Sausage skewers

Flavorful sausage skewers bursting with deliciousness.
Ingredients:
  • 500g lean lamb mince
  • 1/2 brown onion, grated
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 125.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • Olive oil cooking spray
  • 200g tabouli (see notes)
  • 1 tomato, diced
  • 1 Lebanese cucumber, diced
  • 4 pita bread
  • 200g hommus
  • Lemon wedges, to serve
Instructions:
  • Submerge skewers in cold water for 30 minutes as per the tip. Remove and pat dry.
  • Combine mince, onion, cumin, coriander, breadcrumbs, and egg in a bowl, and mix well using your hands.
  • Shape the mixture into 8 portions, rolling each into a slim sausage shape. Skewer each sausage in the center and place them on a plate. Cover and refrigerate for 1 hour.
  • Preheat a chargrill or barbecue grill over high heat, then reduce to medium. Lightly coat skewers with oil and grill for about 10 minutes, turning occasionally, until cooked through.
  • Mix together the tabouli, tomato, and cucumber. Spoon the tabouli mixture onto each pita bread, add the skewers and a dollop of hummus on top. Serve with lemon wedges.
