Summer sausage skewers

Sweet and juicy pineapples and tomatoes enhance the flavor of meaty kebabs.
Ingredients:
  • 440g can pineapple slices in natural juice, drained, juice reserved
  • 41.60 gm tomato sauce
  • 21.00 gm soy sauce
  • 1 clove garlic, crushed
  • 560g (8) thin beef sausages
  • 32 cherry tomatoes
  • Olive oil spray
Instructions:
  • 1. Submerge 16 skewers measuring 20cm in water for 20 minutes. 2. Slice each sausage into 6 equal pieces. 3. Skewer 3 pieces of sausage, 2 cherry tomatoes, and 2 pineapple pieces in alternating order.
  • Prepare the skewers by spraying them with oil and grill them on the barbecue over medium heat for approximately 10 minutes, or until the sausages are fully cooked.
  • In a small saucepan, simmer reserved pineapple juice, sauces, and garlic until thickened and syrupy, about 5 minutes. Pour over sausage skewers before serving.
