Grilled Turkey Sausage Kabobs

Create flavorful kabobs by skewering smoked sausage, bell peppers, onions, and new potatoes, then grilling to perfection. Perfect for summer!
Ingredients:
  • 1 pound new potatoes, halved
  • 1 tablespoon water
  • 2 pounds smoked turkey sausage
  • 3 medium onions
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 10 metal skewers
  • 2 tablespoons olive oil, or as needed
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Prepare the outdoor grill by heating it to medium heat and lightly oiling the grate.
  • Microwave potatoes in a bowl filled with water, cover, and cook on high power for approximately 8 minutes until tender.
  • Cut each smoked sausage rope into 5 pieces. Chop each onion and bell pepper into 10 chunks, then divide the onion chunks in half.
  • Alternate threading the onion, potato, sausage, bell pepper, and potato onto a metal skewer. Repeat for the rest of the skewers and add the remaining potatoes to each skewer.
  • Lay the kabobs on a plate and generously drizzle olive oil over them, then season with salt and pepper to taste.
  • Grill kabobs over high heat with the lid open for 3 minutes. Reduce heat to low, cover, and cook for an additional 3 minutes. Flip kabobs, cover, and grill for 6 more minutes. Transfer to a serving platter.
