Grilled Turkey Panini Sandwiches

Create a tasty Italian-style turkey and cheese panini with artichoke hearts and pesto mayo, perfect for leftover turkey transformations.
Ingredients:
  • 3/4 cup mayonnaise
  • 1/4 cup basil pesto
  • 16 slices crusty Italian bread
  • 1/4 cup butter or margarine, softened
  • 8 slices cooked turkey (3/4 lb)
  • 1 can (14 oz) artichoke hearts, drained, chopped
  • 3 medium plum (Roma) tomatoes, sliced
  • 8 slices (1 oz each) Fontina or provolone cheese
Instructions:
  • Combine creamy mayonnaise with flavorful pesto in a small bowl.
  • Butter one side of each bread slice. Flip the bread slices over and spread the other sides with 1 tablespoon of pesto mixture each. Layer 8 bread slices with turkey, artichokes, tomatoes, and cheese. Place remaining bread slices on top, butter sides facing up.
  • Cook the sandwiches in a sandwich grill or a 12-inch skillet over medium heat for 3 to 4 minutes, flipping once, until the bread is toasted and the cheese is melted.
