Grilled sandwich with turkey, bacon, melted provolone, and spicy mayo.
Ingredients:
  • 8 slices bacon
  • 1 tablespoon butter
  • 0.5 medium red onion, thinly sliced
  • 2 cloves garlic, minced
  • 3 cups fresh spinach leaves
  • 0.5 cup reduced-fat mayonnaise
  • 2 chipotle peppers in adobo sauce, minced
  • 1 teaspoon adobo sauce from chipotle peppers
  • 8 (4 inch) pieces focaccia bread
  • 4 slices provolone cheese
  • 0.5 pound sliced deli turkey meat
Instructions:
  • Fry bacon in a spacious skillet over medium-high heat until crisp and golden, approximately 10 minutes. Place on a paper towel-lined plate to absorb excess oil.
  • Once the bacon is sizzling, melt butter in a large skillet over medium heat. Sauté onion until soft and translucent, about 7 to 10 minutes. Add garlic for the final minute. Toss in spinach and cook until wilted, approximately 3 minutes. Take off the heat.
  • Preheat the panini press as instructed by the manufacturer.
  • Mix the mayonnaise, chipotle peppers, and adobo sauce in a small bowl. Spread the mixture on 4 slices of focaccia bread. Layer each slice with provolone, turkey, 2 slices of bacon, spinach mixture, and the remaining bread slices.
  • Grill sandwiches in the hot panini press until they turn crispy and golden brown, approximately 5 minutes per side.
