Turkey and bacon pie with cornbread topping

Cornbread dumplings with a sweet nutty flavor perched on a bacon and turkey pie filling.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 600g turkey breast, cut into 3cm pieces
  • 4 shortcut bacon rashers, chopped
  • 1 brown onion, finely chopped
  • 1 celery stick, finely chopped
  • 1 carrot, peeled, finely chopped
  • 30.00 ml plain flour
  • 310ml (1 1⁄4 cups) salt reduced chicken style liquid stock
  • 18.80 gm reduced-fat sour cream
  • 50g (1/3 cup) self-raising flour
  • 50g (1/4 cup) instant polenta
  • 20g butter, chilled, chopped
  • 40.00 ml parmesan, finely grated
  • 40.00 ml parsley, chopped
  • 40.00 gm water
  • 37.60 gm reduced-fat sour cream
  • 300g can corn kernels, drained
Instructions:
  • Preheat the oven to 180C/160C fan forced. Heat some oil in a non-stick frying pan over medium-high heat, and season the turkey. Cook in two batches, turning, for about 2 minutes until golden. Transfer the cooked turkey to a bowl.
  • Turn the heat down to medium-low, then place bacon, onion, celery, and carrot into the pan. Cook, stirring occasionally, for about 6 minutes or until they are tender. Put back the turkey into the pan, sprinkle flour and cook for 1 minute until everything is well coated. Slowly pour in the stock while constantly stirring until everything is blended. Bring it to just a boil, then take it off the heat. Let it cool down for 5 minutes, and then mix in the sour cream. Portion the mixture into four 250ml (1 cup) ovenproof ramekins.
  • Prepare the topping by mixing flour and polenta in a bowl. Blend in butter until the mixture looks like breadcrumbs. Add cheese, parsley, and seasonings. Create a well in the center and whisk water and sour cream together in another bowl. Pour into the well and mix until just combined. Gently stir in corn.
  • Spoon the corn mixture generously over the pies. Bake for 20-25 minutes, or until the turkey is fully cooked and the topping is beautifully puffed and lightly golden.
