Savory Sweet Potato Pie

Create a delicious dinner by topping Pillsbury™ pie crust with turkey bacon, green pepper, sweet potatoes, and spices.
Ingredients:
  • 4 slices turkey bacon
  • 1/4 cup finely chopped green bell pepper
  • 2 tablespoons finely chopped onion
  • 1 can (17 oz) sweet potatoes, drained
  • 2 tablespoons sugar
  • 3/4 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon dried thyme leaves
  • 2 eggs
  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
  • 5 thin rings green bell pepper
Instructions:
  • Preheat oven to 375°F. Cook bacon in a large skillet over medium-high heat for 5 to 7 minutes until crisp; then transfer to paper towels to drain. Chop the bacon and set aside. In the same skillet, sauté bell pepper and onion over medium heat for 2 to 3 minutes until crisp-tender, stirring constantly.
  • In a medium bowl, vigorously mash sweet potatoes with a fork; incorporate sugar, seasoned salt, pepper, thyme, and eggs. Use an electric mixer on low speed for 1 to 2 minutes until fully combined. Mix in chopped bacon and bell pepper mixture.
  • Unwrap the pie crust and lay it out flat on a non-greased baking sheet. Spread the filling evenly over the crust, leaving a 1 1/2-inch border. Gently fold the edges of the crust over the filling, pleating as needed.
  • Bake for 30 minutes, then place bell pepper rings over the filling. Continue baking for 15-20 minutes until the crust is golden brown and the center is set. Allow to cool for 5-10 minutes before serving warm.
