Quick and easy Paleo turkey mince pie for a delicious weeknight meal.
Ingredients:
  • 750g parsnip, peeled, cut into 3cm cubes
  • 85g butter, diced
  • 1 brown onion, finely chopped
  • 3 garlic cloves, thinly sliced
  • 100g bacon, finely chopped
  • 500g turkey mince
  • 1 large beetroot, coarsely grated
  • 2 carrots, coarsely grated
Instructions:
  • Steam parsnip until tender for 20 minutes, then drain. Blend in a food processor with 70g butter until smooth. Season to taste.
  • Heat oil in a large, deep frying pan over high heat. Cook bacon until golden, about 2 minutes. Stir in onion and garlic and cook over medium heat for 5 minutes until onion softens. Increase heat to high, add turkey mince, and cook for 3 minutes, breaking up any lumps with a wooden spoon until changed color. Mix in beetroot and carrot and cook for an additional 3 minutes until grated vegetables soften. Season to taste.
  • Preheat the grill to high heat. Spread the turkey mixture into a 7-cup ovenproof dish, then layer on the parsnip mash. Use a fork to create a textured top and sprinkle with the remaining butter. Grill for 5-10 minutes until golden brown.
