One-pot Turkey pad thai

Whip up a quick and delicious one-pot turkey pad thai in just 30 minutes for a speedy and satisfying dinner.
Ingredients:
  • 200g dried rice noodles
  • 500g turkey mince
  • 4cm piece fresh ginger, finely grated
  • 2 garlic cloves, crushed
  • 62.50 ml Chinese cooking wine (shao hsing)
  • 65.63 gm salt-reduced soy sauce
  • 16.00 gm brown sugar
  • 150g green beans, trimmed, halved
  • 1 red onion, halved, cut into thin wedges
  • 250.00 ml finely shredded wombok (Chinese cabbage)
  • 250.00 ml bean sprouts, trimmed
  • Fresh coriander sprigs, to serve
  • Sliced red chilli, to serve
  • Roasted unsalted peanuts, to serve
  • Lime halves, to serve
  • Sambal oelek, to serve
Instructions:
  • Place noodles in a heatproof bowl and cover them with boiling water. Let them stand for 5 minutes, then separate the noodles with a fork, drain, and set aside.
  • Heat oil in a wok over medium-high heat. Add mince and stir-fry for 5 minutes until starting to brown. Add ginger, garlic, cooking wine, soy sauce, and sugar. Cook for 2 minutes until sauce thickens, stirring occasionally.
  • Combine beans and onion in the pan, stir-frying for 2 minutes until the onion just softens. Introduce noodles and wombok, stir-frying for an additional 1 minute until heated through.
  • Present a flavorful dish by arranging noodles adorned with fresh bean sprouts, fragrant coriander, spicy chilli, and crunchy peanuts. Accompany the dish with a side of zesty lime and fiery sambal.
