Saucy Beef and Vegetable Casserole

Delicious one-pot casserole with ground beef (or turkey), zucchini, salsa, and corn topped with a cheesy garlic biscuit crust. Kid-approved!
Ingredients:
  • 1 pound ground beef
  • 1 cup shredded zucchini
  • 1 clove garlic, minced
  • 0.5 teaspoon dried marjoram
  • 0.5 cup salsa
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons white sugar
  • 0.5 teaspoon cream of tartar
  • 0.125 teaspoon garlic powder
  • 0.5 cup sour cream
  • 1 cup milk
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a 9x13 inch baking dish.
  • Heat a large skillet over medium heat and brown the ground beef. Drain. Add zucchini, onion, garlic, and marjoram. Cook until vegetables are tender. Stir in salsa, tomato soup, and corn. Season with 1 teaspoon salt. Transfer to a baking dish.
  • Combine flour, baking powder, sugar, cream of tartar, 1/2 tsp salt, and garlic powder in a bowl. Add butter and mix until crumbly. Fold in Cheddar cheese, sour cream, and milk. Spread over the beef mixture in the baking dish.
  • Cover the dish with aluminum foil and bake in the oven that has been preheated for 25 minutes, or until the topping turns a beautiful golden brown and a toothpick inserted in the center comes out clean.
