Savory beef and vegetable medley simmered in soy sauce, served over fluffy white rice.
Ingredients:
  • 2 pounds ground beef
  • 2 pounds fresh green beans, cut into 1 inch pieces
  • 2 large Spanish onions, sliced
  • 2 green bell peppers, chopped
  • 2 large tomatoes, sliced
  • 2 medium heads cabbage, quartered
  • soy sauce
  • 1 cup white rice
Instructions:
  • In a large stock pot, create layers with ground beef, green beans, onions, bell peppers, tomatoes, and cabbage. Finally, drizzle soy sauce evenly over the top. Cook covered over medium heat for 1 hour until the cabbage is tender and the meat is well done, adjusting heat to prevent burning.
  • Rinse rice in a fine mesh strainer under cold water until clear. Transfer to a saucepan, add 2 cups water, and bring to a boil. Cover, reduce heat to low, and simmer for 15 minutes. Remove from heat and let sit for 10 minutes until liquid is absorbed. Serve over rice.
