Banana cake born in Maui test kitchen with backyard bananas. Delicious!
Ingredients:
  • 0.33333334326744 cup butter
  • 1.25 cups white sugar
  • 2 eggs
  • 1.25 cups mashed ripe bananas
  • 2 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup nonfat plain yogurt
  • 0.75 cup chopped pecans
  • 2 tablespoons confectioners' sugar, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 10-inch fluted tube pan by lightly greasing and flouring it.
  • In a large bowl, use an electric mixer to beat butter and sugar until smooth. Blend in the first egg, then mix in the vanilla with the last egg. Fold in the bananas. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually mix the flour mixture into the creamed mixture with yogurt, stirring until just combined. Gently fold in pecans and pour the batter into a prepared tube pan.
  • Bake in a preheated oven until a toothpick comes out clean, approximately 50 minutes. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with confectioner's sugar before serving.
