Turkey and bacon rissoles recipe

Quick and affordable turkey and bacon rissoles - a flavorful, lean option for a budget-friendly meal!
Ingredients:
  • 125g rindless middle bacon, finely chopped
  • 3 garlic cloves, crushed
  • 20.00 ml finely chopped fresh rosemary leaves
  • 600g extra lean turkey breast mince
  • 25g (1/4 cup) dried (packaged) breadcrumbs
  • 1 egg, lightly whisked
  • 350g packet kaleslaw slaw kit
  • 1 green apple, cored, thinly sliced
  • 50g baby salad leaves
  • 275g jar jellied cranberry sauce
Instructions:
  • In a large frying pan over medium-high heat, heat half of the oil. Sauté the bacon and onion for 5 minutes until the onion softens. Stir in the garlic and rosemary for 1 minute until fragrant. Transfer the mixture to a large bowl. Combine with turkey, breadcrumbs, egg, and seasonings. Shape into 12 rissoles. In the same pan over medium-high heat, add the remaining oil and cook the rissoles for 8 minutes, turning occasionally, until fully cooked. Remove from pan and cover with foil to keep warm.
  • Mix together the kale slaw, packet of dressing, apple, and salad in a large bowl. Season to taste.
  • Heat the pan over medium heat, then combine cranberry sauce, sugar, and 60ml (1⁄4 cup) water. Stir until the mixture is smooth, then bring it to a boil. Next, add the rissoles and cook for 2 minutes or until they are heated through. Serve the rissoles on a bed of salad.
