Grilled Turkey, Bacon and Swiss Sandwich

Delicious turkey and bacon sandwich ready in just 30 minutes for a quick and satisfying dinner!
Ingredients:
  • 8 slices bacon
  • 3 tablespoons butter, softened
  • 8 slices whole-grain bread
  • 6 tablespoons finely chopped sun-dried tomatoes in oil
  • 8 slices Swiss cheese (1 oz each)
  • 12 oz oven-roasted turkey breast slices
Instructions:
  • Cook the bacon in a 12-inch nonstick skillet until it is crispy, then let it drain on paper towels.
  • Spread butter on one side of each bread slice. On the other side of 4 bread slices, generously layer rounded tablespoons of tomatoes. Top each with cheese, turkey, bacon, a second slice of cheese, and complete the sandwiches with the remaining bread slices, buttered side up.
  • Preheat a griddle or 12-inch nonstick skillet over medium heat. Cook the sandwiches in the hot skillet for about 3 minutes until the cheese is slightly melted and the bread is browned. Flip the sandwiches and cook for an additional 3 minutes, or until the cheese is melted and the sandwich is deep golden brown.
