Try this sizzling grilled turkey technique: prop open hot grill for searing heat, avoid spilling flammable juices. Enjoy!
Ingredients:
  • 1 large onion, diced
  • 1 (750 milliliter) bottle red wine
  • salt and pepper to taste
  • 12 pounds whole turkey
Instructions:
  • Fill the bottom of a pot-style grill with a 5-pound bag of charcoal. Light the charcoal, then spread evenly once hot.
  • Prepare the turkey by rinsing it and filling the cavity with onions. Season generously with salt and pepper all over the outside.
  • Place the turkey in a deep aluminum roasting pan on the grill's grate, then drizzle it with wine and cover it with foil.
  • Grill the turkey with the lid covered and vents open for 60 to 90 minutes, basting frequently until the meat reaches your preferred level of doneness. Add water to the pan if the wine evaporates.
