Grilled Chile-Lime Turkey Breast

Grilled turkey breast marinated in zesty chile peppers and lime juice for unbeatable flavor.
Ingredients:
  • 2 dried ancho chiles, stemmed and seeded
  • 2 dried pasilla chile peppers, stemmed and seeded
  • 2 teaspoons ground cumin
  • 2 teaspoons dried minced onion
  • 1.5 teaspoons salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 teaspoons brown sugar
  • 2 limes, juiced
  • 1 (5 pound) boneless turkey breast
Instructions:
  • Grind ancho chiles, pasilla chiles, cumin, onion, salt, and pepper into a fine powder using a spice or coffee grinder. Transfer the spice blend to a bowl and mix in brown sugar until well combined.
  • Drizzle freshly squeezed lime juice over the turkey and massage it with the flavorful spice mix. Allow the marination process to work its magic for approximately 1 hour.
  • Get that grill sizzling hot outside and give the grate a quick oiling.
  • Adjust grill to medium heat. Take turkey out of marinade and save any extra for basting. Grill turkey breast on preheated grill for 3 to 4 minutes on each side.
  • Preheat half of the grill burners to medium-high heat. Grill the turkey breast for 15 to 20 minutes. Turn the turkey over, brush with marinade, and continue cooking until it reaches an internal temperature of at least 165°F (74°C), about 15 to 20 minutes. Rest for 5 minutes before serving.
