Grilled spicy red chile lime chicken ready in just 30 minutes!
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 1/2 teaspoon grated lime peel
  • 3 tablespoons lime juice
  • 1 to 2 teaspoons ground red chiles or chili powder
  • 8 ears corn (with husks)
Instructions:
  • Preheat gas or charcoal grill. Combine all ingredients in a small bowl, excluding the corn.
  • Peel off the large outer husks from each ear of corn and gently remove the silk by pulling back the inner husks. Spread each ear of corn with approximately 2 teaspoons of the butter mixture, saving the rest for later use. Fold the husks back over the ears.
  • Grill the corn over medium heat for 10 to 15 minutes, turning frequently, until tender. Allow it to rest for 5 minutes before serving with the remaining butter mixture.
