Upgrade to grilled turkey sausages for a healthier twist on the classic Italian sandwich, keeping bold flavor intact.
Ingredients:
  • 4 Italian turkey sausages
  • 1 tablespoon sun-dried tomato oil
  • 1 medium red onion, sliced
  • 1 medium bell pepper (any color), sliced
  • 2 tablespoons drained, finely chopped sun-dried tomatoes (packed in oil)
  • 1.5 teaspoons balsamic vinegar
  • 1 teaspoon dried basil
  • salt and freshly ground black pepper to taste
  • 4 (6 inch) hoagie rolls, split lengthwise
Instructions:
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Grill sausages until golden brown and fully cooked, turning occasionally, for 10 to 16 minutes. Use a meat thermometer to ensure they reach an internal temperature of 165°F (73°C) for well-done perfection.
  • Heat sun-dried tomato oil in a skillet, add red onion, bell pepper, and sun-dried tomatoes, and saute until tender-crisp, about 3-4 minutes. Drizzle with balsamic vinegar and sprinkle with basil, oregano, salt, and pepper; stir to combine.
  • Fill the rolls with the turkey sausages, then generously top with the vegetable mixture.
