Italian-inspired skillet sandwiches: Cheesy, crispy delights in 20 minutes! Layer ham or turkey, apple, arugula, and cheese on bread.
Ingredients:
  • 1 cup arugula
  • 1 medium apple, peeled, thinly sliced
  • 1/3 cup mayonnaise or salad dressing
  • 1 clove garlic, finely chopped
  • 8 slices Italian bread, 1/2 inch thick
  • 2 tablespoons butter or margarine, softened
  • 1/2 lb thinly sliced cooked ham (from deli)
  • 4 thin slices onion, if desired
  • 4 slices (1 oz each) Swiss cheese
Instructions:
  • Combine mayonnaise with minced garlic in a small bowl. Spread one side of each bread slice with butter, then spread the garlic mayonnaise mixture on the other side of the bread. Place ham, apple slices, arugula, onion, and cheese on 4 bread slices, then top with the remaining bread slices, buttered sides facing up.
  • Preheat a 12-inch nonstick skillet over medium-low heat for 3 to 5 minutes. Add sandwiches to the skillet and cook uncovered for 6 to 9 minutes, flipping once, until the bread is crispy and the cheese is melted.
