Prawn & chorizo skewers with mustard and thyme dressing

Succulent prawn skewers with a zesty kick from spicy sausage.
Ingredients:
  • 5.90 gm Dijon mustard,
  • 36.40 gm olive oil, plus extra, for cooking
  • 21.00 gm lemon juice
  • 1 tsp thyme leaves
  • 16 green medium prawns, peeled, deveined, tails intact
  • 1 x 110g chorizo sausage, cut into 16 slices
  • salt and cracked black pepper
  • lemon wedges, to serve
Instructions:
  • Submerge 16 wooden skewers in cold water for 20 minutes. Meanwhile, blend mustard, olive oil, lemon juice, and thyme leaves in a small bowl until smooth. Skewer a prawn and slice of chorizo sausage onto each wooden skewer. Season with salt and pepper. Heat oil on a preheated grill or in a non-stick pan over medium-high heat. Cook skewers in batches for 4 minutes until done. Arrange on a platter and top with mustard dressing. Serve with lemon wedges.
