Prawn & chorizo orzo

Flavorful pasta bake with king prawns and cherry tomatoes - delectable and effortless!
Ingredients:
  • 2 cloves of garlic
  • 200 g quality chorizo
  • ½ a bunch of fresh basil (15g)
  • 2 tablespoons sherry vinegar
  • 400 ml passata
  • 300 g orzo
  • 200 g cherry tomatoes, on the vine
  • 400 g large cooked peeled king prawns from sustainable sources
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Peel and finely chop the garlic, slice the chorizo, and finely chop the basil. In a heavy-based pan, heat half the oil and fry the garlic and chorizo for 3 minutes. Deglaze the pan with vinegar, then add passata and 300ml of water followed by the orzo. Bring to a boil, then simmer for 10 to 15 minutes until the orzo is al dente, stirring occasionally. Spread cherry tomatoes on a baking tray, drizzle with remaining oil and season. Roast for 10 minutes until soft. Stir half the basil into the pasta with the prawns. Divide among bowls, top with remaining basil, and serve with roasted tomatoes on the side.
