Apple gravy: a luscious pairing for pork sausages.
Ingredients:
  • 46.80 gm wholegrain mustard
  • 600g pork chipolata sausages
  • 1 leek (pale part only), thinly sliced
  • 200g bacon (about 3 rashers), cut into thin strips
  • 2 tsp plain flour
  • 300ml apple juice
  • 2 red apples (skin on), cored, cut into thin wedges
  • 20.00 ml chopped flat-leaf parsley
Instructions:
  • In a frypan over medium heat, sizzle sausages in hot oil for 8-10 minutes, turning occasionally until they turn a glorious golden hue. Set sausages aside to stay warm as you prepare the savory gravy.
  • Remove excess fat from the pan, then return it to medium heat. Sauté leek, bacon, and flour for 2-3 minutes until the leek softens. Add sausages, apple juice, and mustard. Simmer over low heat for 15 minutes. Mix in apple and cook for another 15 minutes until apple breaks down and sauce thickens. Stir in parsley and serve with mashed potatoes.
