Whip up these flavorful homemade sausages - pure, preservative-free goodness for all to savor!
Ingredients:
  • 8 small onions
  • 45.50 gm olive oil
  • 2 tsp fennel seeds, lightly crushed
  • 50g breadcrumbs
  • 1 Pink Lady apple, coarsely grated
  • 650g Pork Mince
  • 1 Free Range Egg, lightly whisked
  • 300g pkt Brand Superfood Leaf Blend
  • 375.00 ml red cabbage, finely shredded
  • 1 carrot, peeled, coarsely grated
  • 62.50 ml flat-leaf parsley leaves, torn
  • 40.00 ml pepitas (pumpkin seeds)
  • 80ml coleslaw dressing
Instructions:
  • Finely chop 2 onions and quarter the rest.
  • In a frying pan, heat 2 tsp of oil over medium-high heat. Sauté chopped onion and garlic for 5 mins until soft. Add fennel seeds and cook for 1 min until fragrant. Transfer mixture to a bowl and let it cool slightly.
  • Combine breadcrumbs, apple, pork, and egg with the onion mixture using your hands. Shape the mixture into 12 sausages that are 7cm long and 1/4 cup in size.
  • In a frying pan over medium heat, heat the remaining oil. Add the sausages and quartered onion. Cook for 10 minutes, turning occasionally, until the sausages are browned, cooked through, and the onion is soft.
  • Toss together leaf blend, cabbage, carrot, parsley, and pepitas in a large bowl. Divide sausages, onion, and salad onto plates, and drizzle with dressing before serving.
