Grilled apple and chicken sausage salad

Elevate chicken sausages with crispy greens and charred apple slices for a gourmet twist.
Ingredients:
  • 8 chicken sausages
  • 2 large red apples, cored, cut into thin wedges
  • 150g baby spinach
  • 1 Lebanese cucumber, cut into ribbons (see note)
  • 1/2 small red onion, thinly sliced
  • 36.40 gm extra virgin olive oil
  • 40.00 ml apple cider vinegar
  • 5.90 gm wholegrain mustard
  • Crusty bread, to serve
Instructions:
  • Preheat a greased barbecue hotplate and chargrill over medium-high heat. Grill sausages for 5 to 6 minutes, or until fully cooked. Slice into thick pieces and cover to keep warm.
  • Grill apple slices on high heat for 1 to 2 minutes per side until they are lightly charred.
  • In a large bowl, mix sausage, apple, spinach, cucumber, and onion. In a separate small bowl, whisk together oil, vinegar, and mustard until well combined. Season with salt and pepper. Pour dressing over the salad and gently toss to combine. Serve with bread.
