Satisfy hunger with fresh, fruity salad featuring whole wheat pasta and grilled chicken.
Ingredients:
  • 40.00 ml currants
  • 40.00 ml white balsamic vinegar
  • 150g dried wholemeal penne pasta
  • 4 (about 450g) chicken thigh fillets, excess fat trimmed
  • Olive oil spray
  • 1 red apple, quartered, cored, thinly sliced
  • 1 baby cos lettuce, leaves separated, washed, dried
  • 1 celery stick, trimmed, thinly sliced diagonally
  • 40.00 ml shredded fresh mint leaves
  • 18.20 gm extra virgin olive oil
Instructions:
  • 1. Preheat the grill to high heat. 2. Mix the currants and vinegar in a small bowl and set aside to soak. 3. Boil the pasta in a large saucepan of salted water according to package instructions until al dente. Rinse under cold water and drain before transferring to a large bowl.
  • Place the chicken on a baking tray, lightly spray with olive oil, season with pepper, and grill for 3 minutes on each side until cooked through.
  • Slice the chicken thinly against the grain. Mix the current mixture, chicken, apple, lettuce, celery, mint, chives, and half of the oil with the pasta. Season with pepper and toss well. Serve the salad in individual dishes and drizzle the remaining olive oil on top.
