Ingredients:
  • 1 medium brown onion, thinly sliced
  • 2 tsp caraway seeds
  • 900g cabbage
  • 62.50 ml apple cider vinegar
  • 500.00 ml apple cider
  • 255.00 gm chicken style liquid stock
  • 1kg lean thick beef sausages
  • chopped fresh flat-leaf parsley leaves, to serve
Instructions:
  • In a deep frying pan over medium heat, heat half of the oil. Sauté the onion for about 5 minutes until soft. Stir in caraway and cook for another minute until fragrant. Add the cabbage, vinegar, cider, and stock. Let it simmer uncovered for 20 minutes until the cabbage is tender and the liquid reduces. Transfer to a bowl and cover to keep warm.
  • Heat the remaining oil in a pan and cook the sausages, turning occasionally, for 8 to 10 minutes until they are browned and cooked through. Spoon the cabbage mixture onto plates, top with the sausages, sprinkle with parsley, and serve.
