Elevate weeknight meals with flavorful lentils.
Ingredients:
  • 8 gourmet beef sausages
  • 1 brown onion, finely chopped
  • 4 bacon rashers, finely chopped
  • 2 garlic cloves, crushed
  • 125ml white wine
  • 400g can lentils, rinsed, drained
  • 250ml chicken stock
  • 4 sprigs thyme
  • 100g baby spinach leaves
Instructions:
  • Preheat the oven to 200°C. In a hot roasting pan, brown the sausages until they're golden all over, then transfer to a plate. Add onion, bacon, and garlic to the pan and cook until the onion softens, about 5 minutes.
  • Pour in the wine and simmer while stirring for 1 minute until the liquid reduces by half. Take the pan off the heat, then mix in the lentils, stock, and thyme. Arrange the sausages on top and transfer to the oven. Bake for 10 minutes until most of the liquid is absorbed. Take out from the oven and fold in the spinach gently until it wilts slightly.
  • Divide the sausages and lentils among plates and serve right away.
