Grilled Sausages with Caramelized Onions and Apples

Savor the flavors of autumn with a delectable dish of grilled sausages, caramelized onions, and crisp apples paired with roasted new potatoes, fresh veggies, and crusty bread.
Ingredients:
  • 8 sausages
  • 2 tablespoons butter
  • 2 medium onions, halved and sliced
  • 3 large apples - peeled, cored, and cut into thin wedges
  • 2 tablespoons apple cider or red wine vinegar
  • 2 tablespoons brown sugar, packed
  • salt and pepper to taste
Instructions:
  • Preheat the grill to high heat.
  • Using a fork, prick sausages multiple times. Transfer to a pot, cover with water, and simmer over medium-high heat for approximately 7 minutes until fully cooked. Remove from heat and set aside.
  • Heat butter in a skillet over medium heat until melted. Add onions and cook until soft and translucent. Mix in apples, vinegar, and brown sugar; cook, stirring gently, until caramelized, about 10 to 15 minutes. Season with salt and pepper to taste.
  • Place the sausages on the grill or under the broiler and cook until perfectly browned. Serve on a bed of caramelized apples and onions.
