Roast sausages with colorful veggies in the oven for easy and delicious meal.
Ingredients:
  • 2 red capsicums, halved, deseeded
  • 1 large eggplant
  • 3 large zucchini
  • 27.30 gm olive oil
  • 12 gourmet chicken sausages
Instructions:
  • Preheat the oven to a toasty 230°C and prepare 2 large roasting pans with non-stick baking paper.
  • Roughly chop the capsicum, eggplant, and zucchini. Combine with 1 tablespoon of oil in a bowl before transferring to a prepared baking dish. Roast for 25 minutes, flipping the vegetables once during cooking.
  • Coat the sausages in the remaining oil and transfer them to the prepared pan. Roast along with the vegetables for an additional 8-10 minutes, or until the sausages are fully cooked.
  • Season the vegetables generously with salt and pepper. Slice the sausages diagonally into thick pieces.
