Elevate your tray bake with delicious vegetarian sausages for a healthy and flavorful dinner.
Ingredients:
  • 500g pkt Roasting Vegetables with Garlic and Rosemary
  • 1 small green capsicum, seeded, coarsely chopped
  • 36.40 gm olive oil
  • 250g pkt Cocktail Truss Tomatoes
  • 450g Herb & Sons Beef-Free Classic Sausages
Instructions:
  • - Preheat your oven to 210°C and prepare a large baking tray with baking paper. - Cut the vegetables, garlic, and rosemary from the roasting kit into 2cm pieces. - Spread them on the tray along with the capsicum and drizzle half of the oil over them. Season with salt and pepper. - Roast in the oven for 15 minutes. - Then add the tomatoes and continue roasting for another 10 minutes until the vegetables are tender.
  • Heat the rest of the oil in a spacious non-stick frying pan over medium heat. Cook the sausages, turning occasionally, for 10 minutes until beautifully golden and fully cooked.
  • Present the sausages on top of the vegetable mixture for a beautiful final presentation.
