Quick and easy, delicious sausage dinner.
Ingredients:
  • 36.40 gm olive oil
  • 8 beef sausages
  • 1 large brown onion, halved, sliced
  • 400g can chopped tomatoes
  • 637.50 gm beef stock
  • 375.00 ml couscous
  • 165.00 ml pitted kalamata olives
  • 40.00 gm basil pesto
Instructions:
  • In a large frying pan over medium heat, heat 1 tablespoon of oil until shimmering. Cook sausages for 2 to 3 minutes or until golden brown. Transfer to a cutting board and slice into thick diagonal pieces.
  • Heat the remaining oil in the pan and sauté the onion until tender. Add the tomatoes and 1 cup of stock, season with pepper, and return the sausages to the pan. Simmer on low, uncovered, for 15 minutes until sausages are cooked through and the sauce has thickened slightly.
  • While waiting, bring the rest of the stock to a boil in a small saucepan over high heat. Remove from heat, add couscous, cover, and let it stand for 5 minutes until the stock is absorbed. Fluff with a fork to separate the grains. Enjoy!
  • Mix olives into the sausage blend, uncovered, cook for 3 minutes until heated. Stir in pesto, spoon couscous onto plates, top with sausage blend. Enjoy!
