Pork, sage and onion pizza with spiced apple sauce

Modern twist on pork chops with apple sauce.
Ingredients:
  • 2 red onions, each cut into 8 wedges
  • 40.00 ml balsamic vinegar
  • 2 green apples, peeled, thinly sliced
  • 1/4 tsp fennel seeds
  • 2.50 gm ground cumin
  • 1/4 tsp dried sage
  • 80ml cream
  • Juice of 1/2 lemon
  • 450g good-quality pork sausages, casings removed
  • 80g pine nut
  • Fried sage leaves (optional), to serve
Instructions:
  • Preheat the oven to 180°C for the perfect cooking temperature.
  • Spread the onion slices on a baking tray, generously drizzle with vinegar and 1 tablespoon of oil, and sprinkle with seasoning. Roast in the oven for 30 minutes, or until beautifully caramelised.
  • Preheat the oven to 200°C and prepare 2 baking trays with baking paper.
  • Combine apple, fennel, cumin, dried sage, and 1 1/2 cups (375ml) water in a saucepan over low heat. Cook for 30 minutes until apples are soft and liquid is almost fully reduced. Mash apples with a potato masher to create a coarse sauce. Add cream, lemon juice, season to taste, and stir well. Set aside.
  • Heat the last bit of oil in a frypan over medium heat. Cook the pork, breaking up any lumps with a wooden spoon, for 6-8 minutes until nicely browned.
  • **Enhanced Version:** Layer half of the apple sauce onto one Lebanese bread, then cover with half of the pork, onion, and pine nuts. Season to taste. Repeat the layering process with the remaining Lebanese bread and toppings. Transfer to prepared baking trays and bake for 8-10 minutes until crispy and golden. Garnish with fried sage leaves, if desired, slice, and serve promptly.
