Roast pork with crispy crackling and maple mustard pears

Wow your guests with our exquisite winter roast pork, featuring crispy crackling and maple mustard pears.
Ingredients:
  • 2kg boned, trussed rolled pork loin, scored
  • 36.40 gm olive oil
  • 19.20 gm sea salt flakes
  • 23.40 gm Dijon mustard
  • 20.00 ml apple cider vinegar
  • 27.00 gm maple syrup
  • 8 (about 100g each) baby pears, halved
  • 2 small red onions, cut into quarters
  • 6 fresh sage sprigs
  • Spicy pineapple ketchup, to serve (see note)
Instructions:
  • 1. Preheat the oven to 230C/210C fan forced. 2. Lay the pork with the rind facing up on a spacious roasting pan. Dab the rind with paper towel until dry. 3. Drizzle half of the oil over the pork, then massage the salt into the scored cuts. 4. Roast for 35 minutes, or until the rind crackles to perfection.
  • Lower the oven temperature to 200C/180C fan forced and roast the pork for an additional 30 minutes.
  • In a large bowl, mix together the mustard, vinegar, maple syrup, and remaining oil. Add the pear slices and toss until coated. Season generously.
  • Place the onion and pear, cut-side up, around the pork, then add the sage sprigs on top. Roast for 40 minutes more, or until the pork is cooked through and the pear is tender. Transfer everything to a serving platter. Cover loosely with foil and let it rest for 10 minutes. Serve with pineapple ketchup.
