Slow cooker roast pork with crackling and gravy recipe

Create succulent slow-cooker roast pork with crispy crackling effortlessly at home!
Ingredients:
  • 600g-piece pork rind (crackling, see note)
  • 36.40 gm olive oil
  • 1.4 kg boneless pork scotch fillet roast
  • 2 brown onions, each cut into 8 wedges
  • 2 red apples, cored, each cut into 12 wedges
  • 250ml (1 cup) Chicken Style Liquid Stock
  • 1/2 small red cabbage, cut into thin wedges
  • 40g butter
  • 10 fresh sage leaves
  • 40.00 ml plain flour
Instructions:
  • Take the pork rind out of the package and arrange it on a spacious tray. Gently dry it with paper towels and refrigerate it, uncovered, until ready to use.
  • In a large non-stick frying pan, heat 1 tablespoon of oil over medium-high heat and brown the pork on all sides. Transfer the pork to a plate. Then, in the same pan, heat another 1 tablespoon of oil over medium heat and sauté the onion for 3 minutes until light golden and slightly soft. Place the onion, apple, and stock in a slow cooker, add the pork, cover, and cook on Low for 6 hours, turning the pork once, until tender.
  • One hour before your pork is ready, preheat the oven to 220°C/200°C fan forced. Arrange the pork rind on 2 lipped baking trays, making sure to score the rind with a small knife and rub it with salt. Roast in the oven for 30-35 minutes, or until the rind is crispy and golden brown.
  • Place the pork on a cozy plate, cover it with foil, and let it rest. Pour 500ml (2 cups) of cooking liquid into a measuring jug. Swiftly add cabbage to the slow cooker and stir to combine, keeping the lid on to retain heat.
  • In a small saucepan over medium heat, melt the butter with sage until the sage sizzles. Sprinkle in the flour and cook, stirring, for 1 minute. Slowly pour in the reserved cooking liquid, stirring constantly. Simmer for 2 minutes, then strain into a serving jug.
  • Cut the crackling into bite-sized pieces and thinly slice the pork. Then, transfer the vegetables to a serving bowl and enjoy with the pork, crackling, and gravy.
