Slow-Cooker Roast Pork with Fruit

Tender, flavorful meals ready at your fingertips with a dash of spice and the convenience of a slow cooker.
Ingredients:
  • 1 medium onion, sliced
  • 1 pork boneless loin roast, 2 pounds
  • 1 package (8 ounces) dried fruit pieces or raisins (1 1/2 cups)
  • 1/2 cup apple juice
  • 1/2 teaspoon ground nutmeg
Instructions:
  • Add the onions to a 4- to 5-quart slow cooker. Place the pork on top of the onions, then layer with the fruit. Combine the remaining ingredients and pour over the fruit.
  • Cook the pork on low heat for 7 to 9 hours until it is tender. Serve the fruit mixture over the pork. Note: Recipe tested in slow cookers with heating elements in side and bottom; adjust for cookers with just a heated base.
