Slow-Cooker Fruit-Stuffed Pork Roast

Impress guests with juicy fruit-stuffed white meat for a flavorful meal.
Ingredients:
  • 1 boneless pork loin roast (2 pounds)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon butter or margarine, melted
  • 1 cup prepared (moistened) stuffing
  • 1 cup diced dried fruit and raisin mixture
  • 1/4 cup packed brown sugar
  • 1 tablespoon vegetable oil
  • 1/2 cup apple juice or cider
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Instructions:
  • Butterfly the pork by cutting horizontally down the center length, leaving 3/4 inch intact on the opposite side. Open the pork flat. From the center, cut horizontally towards the left side edge, leaving 3/4 inch intact. Turn the pork over and repeat the cutting on the other side to open it flat. If the pork is thicker than 3/4 inch, cover it with plastic wrap and pound it to about 3/4-inch thickness, then remove the plastic wrap.
  • Combine the mustard and butter, then coat the inside of the pork with half of the mixture. Combine the stuffing and fruit, then spread it over the mustard-coated surfaces. Roll the roast and tie it with kitchen twine. Finally, spread the remaining mustard mixture over the outside of the roast and rub it with brown sugar.
  • Heat oil in a large nonstick skillet over medium-high heat. Sear pork until browned all over. Transfer pork to a large slow cooker. Deglaze the skillet with apple juice for 2 to 3 minutes. Season with salt and pepper, then pour over the pork.
  • Slow cook on low heat for 6 to 8 hours until the pork reaches an internal temperature of 160°F when tested with a meat thermometer.
