Cozy winter compote with dried cranberries, apricots, apples, and canned pie filling.
Ingredients:
  • 1 (2-inch) cinnamon stick
  • 2 small apples, peeled, sliced
  • 1/3 cup sweetened dried cranberries
  • 1/2 cup golden raisins
  • 1/2 cup halved dried apricots
  • 1 (8-oz.) can pineapple tidbits in unsweetened juice, undrained
  • 1/4 cup sugar
  • 3/4 cup orange juice
  • 1 (21-oz.) can peach pie filling
Instructions:
  • Add a cinnamon stick to your 1 1/2 to 2 1/2-quart slow cooker, then layer in apples, cranberries, raisins, apricots, and pineapple (with their liquid). Sprinkle with sugar and pour orange juice over the top.
  • Cover and let it simmer on the Low setting for 5 to 6 hours.
  • Before serving, delicately mix the mixture. Remove the cinnamon stick. Gently fold in the pie filling, cutting peach slices into smaller pieces as needed. Serve in small dessert dishes or, if preferred, serve warm over pound cake or ice cream.
