Slow-Cooker Golden Fruit Chutney

Tangy fruit chutney elevates any dish - perfect with meat, poultry, fish, or cheese.
Ingredients:
  • 1 can (20 ounces) pineapple chunks in juice or syrup, undrained
  • 2 packages (6 ounces each) dried apricots, coarsely chopped (2 cups)
  • 1 cup golden raisins
  • 1/2 cup packed brown sugar
  • 1/2 cup cider vinegar
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground mustard
  • 1/8 teaspoon ground red pepper (cayenne)
Instructions:
  • Combine all the ingredients in a 2- to 3 1/2-quart slow cooker.
  • Simmer covered on low heat for 6 to 8 hours until thickened. Allow to cool for about 2 hours before serving.
  • Transfer the chutney into a container and seal tightly. Refrigerate for up to 3 weeks or freeze for up to 2 months. Please note: This recipe was developed and tested in slow cookers with heating elements on the side and bottom. Adjust accordingly for models with only a heated base by following the manufacturer's layering and temperature instructions.
