Giant slow cooker golden syrup dumpling recipe

Fluffy dumpling drizzled in golden syrup sauce, slow cooker recipe for easy entertaining.
Ingredients:
  • 265g (1 3/4 cups) self-raising flour
  • 20.00 gm caster sugar
  • 1/2 tsp ground allspice
  • 30g butter
  • 160ml (2/3 cup) milk
  • Vanilla ice-cream, to serve
  • 250ml (1 cup) golden syrup
  • 55g (1/4 cup, firmly packed) brown sugar
  • 4.40 gm vanilla extract
  • 50g butter, at room temperature, chopped
  • 500ml (2 cups) boiling water
Instructions:
  • In the slow cooker bowl, combine golden syrup, brown sugar, vanilla, butter, and boiling water. Cover and set the slow cooker to High.
  • Sift flour, sugar, and allspice into a large bowl. Use your fingertips to rub the butter until the mixture resembles fine breadcrumbs.
  • Whisk milk and egg in a jug, then add to the flour mixture. Stir gently with a flat-bladed knife until just combined.
  • Uncover the slow cooker and gently mix the sauce. Spoon large dollops of the dumpling mixture into the sauce, allowing them to meld together while cooking.
  • Place a clean, dry tea towel on the surface of the slow cooker. Dry the underside of the lid, then gently cover the slow cooker with the lid, securing the overhanging material on top. Cook on High for 2 hours or until the dumplings are fully cooked and cohesive.
  • Scoop dumplings into bowls using a large metal spoon and top with golden syrup sauce. Enjoy with a side of ice cream.
