Indulge in irresistible pork roast with crispy crackling and a perfect sweet and tangy glaze of honey, maple syrup, vinegar, and dijon mustard. A sure crowd-pleaser at any family meal.
Ingredients:
  • 1.5 kg pork belly roast
  • 4.80 gm table salt
  • 80ml (1/3 cup) honey
  • 54.00 gm maple syrup
  • 3 tsp white wine vinegar
  • 11.80 gm Dijon mustard
Instructions:
  • Remove the packaging from the pork belly and place it on a rimmed tray. Refrigerate overnight without covering to allow the skin to dry out.
  • Let the pork sit at room temperature for 30 minutes. Transfer it onto a wire rack in a shallow baking dish. Preheat the oven to 150C/130C fan forced. Score the skin with a sharp knife in a criss-cross pattern, then season with salt and rub it in.
  • Roast the pork for 2 hours until tender. Increase oven temperature to 250C/230C fan forced. Return pork to oven and roast for an additional 25 minutes until the skin is crispy and crackled.
  • Combine honey, maple syrup, vinegar, and mustard in a small saucepan over low heat, stirring until well mixed. Transfer the mixture to a bowl and let it cool to room temperature; the glaze will thicken as it sits.
  • Place the pork on a decorative platter or carving board and let it rest for 10 minutes. Then, generously spread the glaze over the crackling, saving some to serve on the side for drizzling.
