Make a festive pork belly main dish in the air fryer for juicy meat and crispy crackling.
Ingredients:
  • 9.60 gm sea salt
  • 1kg piece pork belly, rind dried
  • 4-6 small pink lady apples
  • Steamed green beans, to serve, optional
  • 125ml (½ cup) maple syrup
  • 60ml (¼ cup) apple cider vinegar
  • 55g (¼ cup) caster sugar
  • 11.80 gm wholegrain mustard
  • ½ tsp mixed spice
  • 40g butter, chilled, chopped
Instructions:
  • Begin by preheating the air fryer to 200C for 3 minutes. Next, massage salt into the pork rind and lightly spray the air fryer basket with oil. Place the seasoned pork in the basket and spray the pork with oil. Air fry for 25 minutes until the pork crackles. Lower the temperature to 160C, add apples to the basket, and continue air frying for an additional 30 minutes until the pork is tender and fully cooked.
  • In a small saucepan over medium heat, combine maple syrup, vinegar, sugar, mustard, and mixed spice. Bring to a boil, then simmer for 5 minutes until the glaze thickens and becomes syrupy. Stir in cold butter.
  • Arrange the sliced pork on a serving plate with apples and steamed green beans. Finish by drizzling the glaze over the top to serve.
